Key initiatives include sourcing local ingredients to promote biodiversity and minimise transport emissions, implementing water-saving techniques, and using renewable energy sources like solar and geothermal energy to power more efficient stills. These changes, from local sourcing to advanced energy solutions, are significantly impacting the industry's environmental footprint. 

Eco-friendly innovations in packaging and distribution

Eco-conscious packaging solutions are becoming the norm, with materials like recycled, lighter-weight glass and biodegradable plastics becoming more common. The distribution chain is also seeing a shift towards lower carbon footprints. Electric or hybrid delivery vehicles, efficient route planning, and localised distribution centres are just some of the ways the whisky industry is reducing its environmental impact.

The rise of locally sourced whisky

There's a rising trend towards 'grain-to-glass' distilleries, where every aspect of production, from sourcing ingredients to bottling, is done locally. In 2020, the distillery underwent significant updates to reduce its electricity and water usage. These enhancements resulted in a substantial 35% decrease in electricity consumption per litre of alcohol distilled and a remarkable 300% reduction in water usage, thanks to the implementation of a new cooling tower.

Complementing these production efficiencies, Starward has also revamped its packaging approach. The distillery moved its glass production onshore, effectively reducing freight emissions. Furthering their commitment to sustainability, the weight of their Single Malt bottles has been lowered by approximately 200 grams, and these bottles now incorporate about 50% recycled glass. The introduction of plant-based closures signifies another step towards eco-friendlier packaging.

Looking to the future, Starward has set ambitious goals for 2026, including achieving zero waste to landfill, reaching net-zero carbon emissions, and maintaining best-practice water usage. These initiatives showcase Starward Distillery's dedication to balancing high-quality whisky production with a deep commitment to environmental responsibility, setting a notable example in the industry.

Oxford Distillery 

The Oxford Artisan Distillery is redefining whisky production with its focus on sustainability and regenerative agriculture. The distillery uses unique heritage grains, revived from the 1800s, in collaboration with archaeobotanist John Letts. This approach minimises fossil fuel use and enhances biodiversity, making the distillery the only one globally licensed to use Letts’ diverse grain varieties, selected for flavour instead of yield.

This method places The Oxford Artisan Distillery at the forefront of a movement towards sustainable spirits production. The trend resonates with consumers increasingly favouring environmentally conscious products. CEO Dave Smith emphasises the industry's responsibility to advance sustainable farming and grain production. Supported by Diageo and Distill Ventures, the distillery aims to leverage whisky production as a driving force in the sustainable agriculture revolution, marking a commitment to both exceptional spirit crafting and environmental stewardship.

Stauning Distillery 

Stauning Distillery, a fresh and innovative player from Denmark, has embraced sustainability as a core principle since its inception. Founded by nine friends with a passion for whisky but little expertise or funding, Stauning has always prioritised a reuse and recycle ethos. They began their journey using barley from a local farmer, peat from a nearby museum and repurposed a meat mincer for milling in their original butchery-turned-distillery.

As the distillery grew, their commitment to sustainable practices expanded. In their new facility, Stauning implemented renewable energy sources, integrating both wind and solar power. The distillery continues to source locally grown barley and heather and forages peat from nearby bogs. They are dedicated to using natural minerals and processes to further minimize their environmental footprint.

Stauning's approach to whisky-making is a blend of traditional methods and modern sustainability. Their use of renewable energy and recycling of waste materials demonstrate their commitment to environmentally friendly practices. By leveraging natural resources and processes, Stauning Distillery not only produces distinctive Danish whisky but also sets an example in sustainable production within the spirits industry.
